Lotus Hot Pot & Grill

Been here a few times now and it's always an enjoyable experience. Clean casual and hip restaurant. Currently they're very short staffed, but you almost wouldn't even notice with how they seem to keep everything moving along. Definitely recommend this place! Hope they are able to hire more people soon, so they have the help they need.

Overall a really solid hot pot place. Meats were fresh, tender from super thin cuts, and high quality (not to mention massive portions), though I found the beef/pork/lamb offerings stronger than the seafood options, unsurprising given KC’s lack of nearby large bodies of water Importantly, I loved the Tom yum and herb broths, which were VERY flavorful (highlight of this place for me) but a bit on the salty and greasy side. The sauces were definitely on the heavy side and too salty, requiring a substantial bit of dilution, and still culminating in a lot of thirst after.
