Tonbo Ramen

The service was good, so does the atmosphere. However, the ramen wasn’t as authentic as I hoped. The tonkatsu ramen, which costs $15, seems to lack few main ingredients of a ramen. Firstly, there’s no “tare” which gives it rich flavor. There’s also no chashu pork, only pork belly. Lastly, why are there dumplings in the ramen?? Keep that in mind if you are looking for authentic Japanese ramen, apart from that there’s nothing wrong about the place.

I think there's room for improvement. Went twice in less than a week and had very different experiences. Probably this would be best as takeout for me. I'm not sure why Sunday my dish was so less generous. The first time I ate here I was offered vegetable in my ramen as replacement for dumplings. I had generous amount of meat. I think yesterday I had one piece of meat only and the waitress didn't offer me anything to compensate for no dumplings. That changed everything to me. The dish went from being a 9 or a 10 to being a 5. If I'd taken it home I guess I could have added something myself.. I guess I could have brought it up to the server but if any management is reading please consider trying to keep it consistent. We needed a new ramen spot since our regular spot is a bit of a drive and this turned out to hit all the right notes. First off, the ramen is exceptional. Everything about it from the options, flavor, portions and price was awesome. Buns and the Japanese fried chicken were also on point, as were the small plates and drinks. We enjoyed everything except for some parts of the service we had. We had 2 servers, one that was very delayed, casual and didn't really step up till the other server was obviously outdoing the original service we had received. Granted it was a slow night in the mid week, so I get it but it's the only reason for the docked star. We'll be back to try and fill in that last star with another attempt as this place certainly deserves it.
