What a astonishing dining experience! Exceptional use of local grown foods. The team makes a very hard effort to be sustainable (which is very difficult in this Industry). The food was exquisite. Everything was made with purpose and made with thought. Great concept and outstanding food. I wish I lived here to enjoy it more often.

First and foremost, this restaurant is absolutely stunning. The flavor combinations, freshness of ingredients, and beautiful plating made dinner and experience and so much more than just a meal. Being able to interact with the chef as your meal was prepared also added a sense of fun. I've eaten at quality restaurants all over the world and BRUTO absolutely stood out. Only warning I would give to potential diners is to ensure your bank account is rather healthy before going. While not the most expensive restaurant in Denver, it is definitely premium ingredients, a premium experience, and a near premium price to match. However if you are a foodie in any regard it's absolutely worth the cost and then some. Vegetarian options: A large portion of what we had was actually vegetarian, and farm to table. One of the most amazing food experiences of my life. If you have the opportunity to go here, do not pass it up. It's amazing to get to see each course come together right before your eyes. A chef's team operating with the precision of a surgeon. The pairings were immaculate with flavor combinations that you likely won't experience anywhere else. I cannot recommend BRUTO enough.
