Stubborn Seed

Not Michelin star quality The bill: around 1.200$ for 4 guests. No tip included. Two bottles of wine and 4 cocktails plus the tasting menu. The food: the quality of the food was good but not spectacular. Neither the experience itself. Interesting flavours in general but nothing that I haven’t tried before in restaurants without stars such as Bazaar by Jose Andres. Maybe for Miami quality, this is a good restaurant but disappointing if you’ve tried several one star restaurants around the world. The food included 7 courses. A little starter and dessert. Please notice portions are very small so If you have a big appetite you will be slightly hungry when you leave. My husband left a bit hungry. The service: good but extremely far form excellent as a one star restaurant should be. The restaurant tried to cancel our reservation 3 hours before the reservation. Unacceptable. I have eaten here several times and last evening we had the late summer menu. It was a lot of foam, savory and sweet and mixture of textures. Nothing stood out! Nothing wowed for the first time ever! It was a lot of molecular gastronomy with foams and mixes or textures and sauces but so much sweet with the savory didn’t make me love anything! The best part of the menu was the halibut in potato crust! The potato was overly salty to the point I needed to wipe some of it off and usually I salt things and love salt. They nicely substituted the oyster for a macaroon with caviar. This was a lemon sweet cream filled macaroon that was topped with caviar . It was too sweet and like a dessert they threw caviar on. The tuna was interesting. Two different takes on the raw tuna. One chopped up and one pieces of tuna. Again didn’t love it . I’d say the best thing on the menu was the duck but even this had a Smokey and sweet sauce . I am not a sweet and savory person so this menu was not for me but

Stubborn Seed was an excellent culinary experience from top to bottom, and I highly recommend dining here. Our food runner, Jordan, was amazing. He eloquently described each dish to perfection, and highlighted our dinner and night out overall. Our server, Steven, suggested some great dishes that met our needs and tastes seamlessly.
