The fact that you would think that this is okay to serve ??? Is not good! Do you not cut the lettuce up and wash it before serving, it tells me you have your lettuce sitting there rotting away! This makes people physically sick! Any signs of brown on lettuce means it’s gone bad! Really gross and disgusting. DO BETTER! I do not know how you past inspection. By the way the picture does no justice!
