I thought it was an interesting experience for an experiment in modern Asian fusion. I don't think it was memorable enough that I would go back. It was a decent and interesting food experience that wasn't probably good for the value proposition. The place is right in the lower downtown, easy to get to. Pretty upscale and nice. You won't probably regret experiencing it. But it would just be not that memorable. Could I have visited downtown Denver without trying it? Yes, go to Dairy Block, Central Market, eat at Snooze or Sam's No 3... you wouldn't be missing out much without this one. If you want great modernized asian or Chinese food, go to Hop Alley instead. Much greater value for the price and flavours are truer to the traditional flavours.

Wow - this place is fantastic! Delicious food, great cocktails and friendly, attentive staff. At the recommendation of our server, Katie, we ordered about two dishes per person and shared everything. Standouts included the French onion soup dumplings (not to be missed), pork belly buns, crispy fried chicken with hot honey ranch, stir fried Malaysian noodles and the 5 spiced doughnuts. The Vietnamese coffee espresso martini was to die for. Highly recommend!

4.11.2023 ChoLon @cholon_denver is a contemporary Asian eatery in Denver where I enjoyed a delightful and relaxed lunch during my recent visit. After finishing my meeting and checking into my hotel, I took a leisurely stroll to the downtown location of ChoLon. The menu featured innovative twists on classic Asian dishes, which initially left me feeling both intrigued and skeptical, but I'm glad I decided to give it a try. I ordered the French onion with Gruyère soup dumplings and General Cho's chicken soup dumplings. Though these unconventional fillings deviated from the traditional soup dumpling, they turned out to be quite delicious. The wrappers were thin and slightly chewy, enclosing a delectable broth and tender meat that I thoroughly enjoyed. The standout dish was the kaya toast with egg cloud, a modern interpretation of a classic Malaysian breakfast. I was pleasantly surprised by its exquisite taste. The sweet and creamy kaya spread paired perfectly with the expertly whipped egg.
