Cho Sushi Japanese Fusion

We are lucky to have such a decent Japanese sushi & eatery joint in the neighborhood. The service is always good & I really enjoy it when the owner works behind the counter preparing the sushi himself. You can tell the difference in food quality!

Stopped in for dinner last night while in town. We the chirashi, king salmon ceviche, katsu chicken, and a bottle of Wandering Poet sake. The service was great and the food wasn’t bad. The chirashi was sliced thinner than most places and the tuna wasn’t bad but not super fresh (you can see the color and breakage/deterioration of flesh in picture). They were out of King Salmon and I approved a replacement with the lower grade salmon used in Sake nigiri. For me (everyone has different taste) the mix of ingredients didn’t work and perhaps the fattier King Salmon would have completed the mix, such as the truffle oil, better. The katsu chicken was good and came atop a nice bed of mixed vegetables. Sauce on the side would have been better in serving style so breading doesn’t get soggy. The sake bottle our waitress recommended was excellent. Very cute space and nice menu variety!

I really enjoyed the location, the cuisine, and the oysters. All of the food I tried—oysters, calamari, and the blue cheese burger—was excellent. The staff was really polite and attentive.
